Description
This machine is designed for grinding chocolate and couverture masses of various viscosities and compositions, using five steel rollers that are hydraulically controlled. Once the pressing pressures have been set, the grinding gaps adjust automatically and can be easily reproduced. A control lever allows the rollers to be disengaged or engaged (set to pressure) without changing the previously established settings. The applied pressures can be monitored via pressure gauges, as can the water inlet temperatures for the individual roller cooling systems. The mass is fed into the bottom pair of rollers through a feed hopper and is removed from the fifth (topmost) roller by means of a scraper blade. The machine's throughput depends primarily on the composition of the mass (in particular its fat content) and the desired degree of fineness.
