Description

The machine for pre-crystallizing chocolate masses is a further development of the proven MST type. The large cooling surface of the three cooling stages and the long dwell time of the mass in the machine are decisive for optimal temperature control. An evenly fine crystal structure is achieved by frequently scraping off a very thin chocolate film. Cooling takes place by supplying cold water. An internal hot water circuit is activated for night-time operation so that the machine does not 'freeze'.
