The machine is suitable for milling chocolate and compound masses of most different viscosities and compositions, whereby the five steel rolls are monitored hydraulically. Once the pressing power has been regulated, the milling gaps balance out automatically and are easily reproducible. With a change lever the rolls can be unlocked or run under pressure without changing the previously adjusted parameters. The adjusted pressures are indicated via manometer as well as the water inlet temperatures of every roll cooling system. Through a feed hopper the mass is led to the lower pair of rolls and taken off the fifth upper roll by means of a scraping knife. The output depends on the mass composition (especially on the fat content) and the desired fineness.
